Chicken Spinach Pasta Easy 8 per family


3 cups cooked shredded chicken
8-10 oz. rigattoni noodles
1 C. chopped onions
10 oz. frozen spincah ( you can use fresh)
2 can italian diced tomatoes
8 oz. sour cream or 8 oz. chive and onion cream cheese--- i just use the amount that i think it looks creamy
salt &pepper
2 cups mozzarella cheese

Combine everything except chicken, noodles, cheese

add chicken and noodles

cover with cheese--i put in some cheese in the mixture

bake 30 min covered 15 min uncovered

  1. Notes:
    The Recipe above makes enough for 2 families; you only need to triple it for 6 families.
    I seasoned the chicken with seasoned salt before I baked to add more flavor.
    Do not drain the diced tomatoes
    Cook and squeeze dry the spinach
    Only cook pasta for half the time on the box so it isn't too soggy
    I used greek yogurt and added chives and onion powder; Jo used half sour cream/half chive and onion cream cheese
